Bicol Express with Sigarilyas Recipe

Happy Monday Mommies!

Are you a spicy food lover? This recipe i will share is described as pork cooked in coconut milk with shrimp paste and chilies. This is famous recipe from Philippine region (Bicol). Bicolano's are well known for their spicy and delectable foods that everyone will surely love and enjoy. So try this recipe and let me now what you think?

Ingredients:

Pork Belly, cut into strips separate the meat and fat.
Bagoong or Shrimp Paste
Green Chilies, sliced diagonally
Red Chillies for garnish
Cooking Oil (optional)
Coconut Milk, 2nd extract
Coconut Cream, 1st extract
White onion
Sigarilyas or Wing'd Beans
Chicken Cube/powder
Salt and Pepper

Preparation:

Heat oil in a pan and saute onion until translucent, then add the pork. Or you may sear the fat of pork until the oil comes out then add the onion saute until translucent then add the meat of pork, cook until medium brown or it tenders.
Add the shrimp paste. Sit fry and make sure the pork is completely covered with shrimp paste.
Pour coconut milk, green chilies, season with salt, pepper and chicken cube or powder.
Cover and simmer on a medium heat.
Add the coconut cream and sigarilyas or wing'd beans and simmer in low heat or until the coconut cream thickens.
Topped with red chilies and serve hot and Voila!
